La Nucíá cheese takes its name from a small town in the province of Alicante.  It is also called &amp;#039;&amp;#039;&amp;#039;Queso de pastel&amp;#039;&amp;#039;&amp;#039;, due to its characteristic shape. [[Cheese]] is produce in the provinces of Alicante and Valencia.&lt;br /&gt;
&lt;br /&gt;
This is a fresh [[Cheese|cheese]], originally made with [[Goats|goats]]’ [[Milk|milk]] or [[Ewes|ewes]]’ milk or a mixture of both. It is entirely white and rindless. The interior is gelatinous and without holes, with a soft and slightly elastic texture.  It has a very mild, milky flavour, and is melting, but never salty on the palate.  It is now produced from [[Pasteurised|pasteurised]] semi-skimmed milk.&lt;br /&gt;
&lt;br /&gt;
It has a tapered shape and its surface is characterised by small diamond-shaped ridges. Its size is average, with weights ranging between one and two kilos.  Its shape is due the stainless steel or aluminum, moulds in which it is drained.&lt;br /&gt;
