Ilha Graciosa is a hard unpasteurised cows’ [[milk]] [[cheese]] from the island of Graciosa in the Azores.

Having a pale yellow interior and a rich yellow rind, the [[cheese]] has a crunchy texture and irregular small holes and cracks. Its aroma and strong initial flavour is that of cow sheds, but as it is consumed, the flavour becomes mellower, with added hints of [[vanilla]].

Available from Waitrose, Ilha Graciosa is one of my favourite [[cheeses]].
