It is quite elaborate but definitely worth the effort.  Cooking the [[Cauliflower|cauliflower]] in three separate ways, [[Vinaigrette|vinaigrette]], [[Deep fried|deep fried]] and boiled, gives an extra contrast to this dish.&lt;br /&gt;
&lt;br /&gt;
The cheese sauce is sublime, but the cleverest idea is soaking some of the cauliflower in a vinaigrette.  It adds a fantastic random taste&lt;br /&gt;

| Using a small pan, stir the [[Sugar|sugar]] into the [[Vinegar|vinegar]] and  bring to the [[Boil|boil]]&lt;br /&gt;
| Put a third of the [[Cauliflower|cauliflower]] florets  into a bowl, pour the [[Vinegar|vinegar]] mix over the florets and [[Refrigerate|refrigerate]] for at least half an hour&lt;br /&gt;
| Fill another small pan &amp;amp;#190; full with [[Groundnut oil|groundnut oil]] and heat over a medium high heat.  When the [[Oil|oil]] reaches 180° C (350° F) add the second third of the florets and [[Fry|fry]] for about 3 minutes until golden.&lt;br /&gt;
| [[Blanch]] the remaining third of the florets in [[Boiling|boiling]] [[Salted|salted]] water until soft, about 4 minutes. These could also be [[Steamed|steamed]]&lt;br /&gt;
| Add the reduced [[Stock|stock]] and [[Wine|wine]] to a pan over a medium heat&lt;br /&gt;
| Mix in the [[Grated|grated]] Gruyère and cornflower and mix well until the [[Cheese|cheese]] is incorporated into the [[Stock|stock]]&lt;br /&gt;
