Gratte-Paille is an industrial, soft, [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] from the Seine-et-Marne département of the [[French]] region of Ile de [[France]].  It was created in the early 1970s and takes its name from &amp;#039;gratte&amp;#039; (scratch) and &amp;#039;paille&amp;#039; (straw), highlighting the fact that once, in summer, when carrying straw bales around the narrow streets, pieces of straw were inlaid in the walls. &lt;br /&gt;
&lt;br /&gt;
The [[Cheese|cheese]] is very mild, smooth and extremely creamy, with a pleasant flavour of [[Mushrooms|mushrooms]], increasing in intensity as it matures.  It has a natural, bloomy white rind and is matured for 3-4 weeks.  It has a high [[Fat|fat]] content fo 70% fat to dry matter.  Sometimes, these [[Cheeses|cheeses]] are sold on small straw mats.&lt;br /&gt;
