Also known as Sprisciocca, Giuncata abruzzese is produced using unpasteurised cows’ milk. It is a fresh [[cheese]] which is eaten within 2-3 days.

The [[curd]] is placed in wicker basket made from plaited rushes, slightly pressed and a little salt is added. The outside of the [[cheese]] has the markings of the rushes. It has a milky white colour, a soft texture and an aroma of sweet and delicate fresh [[milk]].

The size of the [[cheese]] can vary from 200 g - 1 kg.
