Geheimratskäse is a pasteurised cows’ [[milk]] [[cheese]] from Oberösterreich, which is named after the Dutch town of Heemrat, where the [[cheese]] variety originates.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a light yellow colour with small holes and a mild, aromatic flavour.  It has a waxed rind, which is usually red.&lt;br /&gt;
&lt;br /&gt;
The cylindrical [[cheese]] is 7.5 cm in diameter, 5 cm high and weighs about 250 g.  It is matured for four weeks.&lt;br /&gt;
