[[Gata-Hurdes]] is a [[Goats|goats]]’ [[Milk|milk]] [[Cheese|cheese]] from the Sierra de Gata in the province of Cáceres.  It is available fresh or matured and its strength increases from medium to strong with age.&lt;br /&gt;
&lt;br /&gt;
The interior of the [[Cheese|cheese]] is compact with a few small cracks and is pale yellow in colour.  The flavour is sour, slightly spicy and salty and it is very greasy and oily on the palate.  It has a dense, soft texture. The rind is roughish, oily and [[Orange|orange]]-[[Brown|brown]] due to its [[Paprika|paprika]] coating.  It has an irregular cylindrical shape, and weighs between 500g and 1kg.&lt;br /&gt;
