Produced with Lucana goats’ [[milk]], Formaggio dei Zaccuni comes from in the Alto Sauro Camastra region of Basilicata.  ‘Zaccuni’ refers to the stubble, dry sticks and bark which is the usual diet for that particular breed of goat.&lt;br /&gt;
&lt;br /&gt;
The cylindrical [[cheese]], has a hard, yellowish rind and an ivory interior and weighs between 500 g and 800 g.  It has a fruity and intense flavour and is matured for 2-9 weeks.  &lt;br /&gt;
