Fodòm is an unpasteurised cows&amp;#039; milk cheese which has been produced since 1983. Fodòm is the Ladin name of Livinallongo del Col di Lana. Like Renaz and [[Contrin cheese|Contrin]], it is produced exclusively by the Cooperative Dairy of Livinallongo, which has been in operation since 1932.&lt;br /&gt;
&lt;br /&gt;
Fodòm is cylindrical in shape, with a height of 8-10cm, diameter of 30cm and weight of 5 Kg. The paste is moderately close-textured, straw-yellow in colour tending towards pale [[Hazelnut|hazelnut]] towards the rind. It is pitted with a large number of regular holes of a diameter of 3-4 mm. It has a semi-soft and elastic consistency and a smooth, even, thin rind, hazelnut-brown in colour with the name marked upon it. It is a semi-[[Fat|fat]] table [[Cheese|cheese]] and is best eaten within 60 to 90 days of production. It has a slightly acidic aroma reminiscent of [[Yoghurt|yogurt]], with a slight [[Bitter|bitter]], herby note.&lt;br /&gt;
