Jean-Charles Pépin of Bours in the département of Pas-de-Calais.  It is a pressed, uncooked, &amp;#039;&amp;#039;fermier&amp;#039;&amp;#039; [[Cheese|cheese]], with a dry, bloomy, [[Smoked|smoked]] rind and made to a traditional recipe.&lt;br /&gt;
