==Évora cheese ==&lt;br /&gt;
Évora  is a semi-hard or hard unpasteurised ewes’ [[milk]] [[cheese]] which takes its name from the capital of the province of Alto Alentejo, about 150 km east of Lisbon.&lt;br /&gt;
&lt;br /&gt;
The interior of the [[cheese]] has a yellowish colour, which becomes darker when exposed to air, and a light yellow rind.  It has a creamy, salty, flavour with an acidic aftertaste.  As it matures a stronger taste of sheep develops.  &lt;br /&gt;
&lt;br /&gt;
Weighing only 100-150 g the [[cheese]] is also known as &amp;#039;&amp;#039;&amp;#039;Queijinhos do Alentejo&amp;#039;&amp;#039;&amp;#039; and they are sometimes preserved in [[olive oil]].&lt;br /&gt;
