El Gigante de Guara is a hard, artisan, unpasteurised ewes&amp;#039; [[milk]] [[cheese]] is produced by Capricho de Guara which is in the natural park of Las Almunias de Rodellar in the Huesca province of Aragón.  It is matured for 15 months.&lt;br /&gt;
&lt;br /&gt;
The cheese has a brown, hard, rough rind and a creamy white, compact interior with a few sporadic holes.  The flavour is slighty acidic, but pure and fresh which becomes nuttier with age.  It is of medium to strong strength with an aftertaste which becomes more intense with maturation.&lt;br /&gt;
