The [[Edami cheese]] was named after the Dutch [[Edam]] seaport where it has had a great market up to now. The surface of the [[Edami cheese]] is even, only a small number of round holes with a size of a pea can be found on the surface of a section but it is not considered as a fault if there are no holes at all. The [[Edami cheese]] which often has a yellowish [[Cheese|cheese]] texture belongs to the cheese having a crumbly structure and mild taste and smell. Its mild and sweetish taste and flexible state can be attributed to the fact that a part of the [[lactose]] is washed out from the coagulated [[Milk|milk]] in the course of the production and that is the reason why it is sometimes called “washed [[Cheese|cheese]]”. Despite the foregoing, the more matured [[Edami cheese]], however, may have a definitely piquant taste.&lt;br /&gt;
