Crayeux de Roncq, also known as Carré du Vinage is a soft, [[Unpasteurised|unpasteurised]] [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]], with an [[Orange|orange]] washed rind which is made in the Lille area.&lt;br /&gt;
&lt;br /&gt;
Square in shape, its texture is grainy, soft and creamy with a chalky centre. At a height of 4.5cm and measuring 10 cm square, it weighs about 300 grams and contains only 27% [[Fat|fat]]. It is moulded by [[Hand|hand]] with a ladle and ideally matured for 2 months, during which it is regularly washed with [[Salt|salt]] water and [[Beer|beer]].&lt;br /&gt;

Crayeux de Roncq was created by master cheesemakers Theresa-Marie Olivier and Philippe Couvreur. Marie-Therese, the only producer, owns a farm just 20 km from Lille in Roncq.&lt;br /&gt;
