The difference between Cornmeal and [[cornflour]]: Cornflour is [[sweetcorn]] kernels ground to a fine chalky white powder and is a valuable thickening agent in sauces;  &amp;#039;&amp;#039;&amp;#039;Cornmeal&amp;#039;&amp;#039;&amp;#039; is generally yellow in colour, stays hard and gritty, and does not mix well with liquids unless further processed as &amp;#039;&amp;#039;&amp;#039;masa harina&amp;#039;&amp;#039;&amp;#039;.&lt;br /&gt;

Fine yellow cornmeal is much more like normal [[flour]]. It is very finely ground and is ideal for dusting [[dough]] based products such as [[pizzas]], prior to baking to prevent sticking to the [[baking tray]].&lt;br /&gt;

&amp;#039;&amp;#039;&amp;#039;Masa harina&amp;#039;&amp;#039;&amp;#039; is a form of ground dried cornmeal that is further processed by adding lime (calcium hydroxide).  It is mainly used in Mexican cookery to make [[Corn tortilla recipe|tortillas]] and [[taco chips]].  It does not have the yellow colour of cornmeal and is milled much finer than cornmeal.  It has the feel of wholemeal flour.&lt;br /&gt;
