Cornish Quartz is a [[Cheddar]]-type, pasteurised, cows&amp;#039; [[milk]] [[cheese]] which is produced by Davidstow Creamery near Camelford in Cornwall.  The [[milk]] comes from farms in Devon and Cornwall.  It is made with vegetarian [[rennet]].&lt;br /&gt;
&lt;br /&gt;
The strong [[cheese]], which is matured for 20 months, has a rich, complex range of sweet and savoury flavours that are perfectly balanced with its creaminess and lingering aftertaste.  It has a crunchy, flinty texture which is caused by lactate crystals which are formed naturally during its maturation.&lt;br /&gt;
&lt;br /&gt;
The light yellow [[cheese]] is sold in weights of 100g, 250g and 350g and is only available from branches of Waitrose.&lt;br /&gt;
