| Heat the [[Oil|oil]] in a small saucepan over a medium heat and [[Fry|fry]] the [[Garlic|garlic]] until it is soft.&lt;br /&gt;
| Stir in the [[Chilli|chilli]] and [[Red pepper|red pepper]] and sauté for about a minute.&lt;br /&gt;
| Add the [[Chilli|chilli]] paste and the [[Tomato|tomato]] purée and cook for 5 minutes gently stirring constantly.&lt;br /&gt;
| Remove from the heat and allow to cool.&lt;br /&gt;
| Transfer the mixture to a [[Blender|blender]] and process until it is smooth.&lt;br /&gt;
| Pour into an airtight container and mix in the [[Mayonnaise|mayonnaise]].&lt;br /&gt;
| It will keep in the [[Fridge|fridge]] for a few days.&lt;br /&gt;

If you are using [[Home-made mayonnaise|homemade mayonnaise]], I find that the [[Dip|dip]] has a softer and better texture if the [[Mayonnaise|mayonnaise]] is made with whole [[Eggs|eggs]], rather that just the [[Yolks|yolks]].&lt;br /&gt;
