When ready [[Brown|brown]] the [[Chicken|chicken]] and then [[Brown|brown]] the [[Sausage|sausage]], pour off [[Fat|fat]] and reserve [[Meats|meats]].&lt;br /&gt;
| In a large, heavy pot or cast [[Iron|iron]] [[Skillet|skillet]], heat the [[Oil|oil]] and [[Flour|flour]] over medium heat stirring constantly until thoroughly mixed.   Place the white [[Roux|roux]] into a 350 degree [[Oven|oven]] for one hour or until the [[Roux|roux]] reaches a dark reddish-[[Brown|brown]] colour, or darker ([[Coffee|coffee]] or [[Milk|milk]] [[Chocolate|chocolate]] coloured) for a dark Cajun-style roux.&lt;br /&gt;
