Cembro is a [[Camembert]] style, Alpine Chamois [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] from the Hautes-Alpes département of Provence-Alpes-Côte d&amp;#039;Azur.  It is named after the [[Swiss]] Pine (Pin Cembro) which grows in the Haut-Queyras area.&lt;br /&gt;
&lt;br /&gt;
Its texture is creamy and the flavour becomes more assertive as it matures, without ever becoming spicy.  It has a soft rind and is cylindrical in shape.  The diameter is 9cm, height 3.5cm and weight 210g.&lt;br /&gt;
