A fan circulates the hot air around the food at pressure, cooking the food and producing a crispy layer thanks to the [[Browning#The_Maillard_reaction|Maillard effect]].&lt;br /&gt;
By circulating air up to 200 degrees Celsius, air fryers cook foods such as [[potato chips]], [[chicken]], [[fish]] using far less [[oil]] or [[fat]] than conventional [[deep fryers]].&lt;br /&gt;

I Still use a slicone liner im my air-fryer but now I line it with special baking parchment.  It saves on the washing-up. Just make sure there is always enough food to weigh down the paper or it &amp;#039;&amp;#039;will&amp;#039;&amp;#039; get sucked up into the heating element and could catch fire.  That aside, I&amp;#039;m converted.
