Castelo Branco is a semi-soft, [[DOP (Portuguese)|DOP]] ewes’ or goats’ [[milk]] [[cheese]] from the town of the same name in the province of Beira Baixa, of which it is the capital.  It is about 270 km northeast of Lisbon.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is white to straw yellow in colour and has a natural rind.  It has a very intense smell and spicy taste which becomes stronger and saltier as it matures.  It also hardens and becomes greyer in appearance.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is only produced during the autumn.&lt;br /&gt;
