Casècc is an [[Unpasteurised|unpasteurised]] [[Cows|cows]]&amp;#039; and/or [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] from the Montefeltro area of the [[Italian]] region of Marche. It is produced from October to March.&lt;br /&gt;
&lt;br /&gt;
The [[Cheese|cheese]] is matured for 1 month to 1 year in a cool, damp environment and are turned daily for the first 10 days.  It is then placed on [[Walnut|walnut]] leaves for 8 days then stored in the in the characteristic terracotta jars.&lt;br /&gt;
&lt;br /&gt;
The [[Cheese|cheese]] has a height of 4-8 cm, is 14-22 cm in diameter and weighs 700g to 2 kg.  It has a straw-yellow rind, amd a the interior is smooth, translucent and firm without holes.   It has a pleasant, mellow flavour.&lt;br /&gt;
