Carré de l'Est is a soft cows’ [[milk]] [[cheese]] produced the lush pastures of Alsace and Lorraine. It is not pressed and is matured in cellars for 3-4 months. It is washed and turned by hand to give it is orange-red colour and sometimes it is covered with a bloomy mould.

A strong, salty, tangy, square [[cheese]], which has a taste similar to smoked bacon, Carré de l'Est has small, regular holes in the centre. The rind is sticky and elastic and the [[cheeses]] with the bloomy rind are superior to those which do not.
