Caprino del Molise is a [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] which is produced throughout the [[Italian]] region of Molise, but is particularly popular in the Montefalcone del Sannio area.  It is made with kid [[Rennet|rennet]] and is only made from April to September.  The [[Cheese|cheese]] is moulded in reed baskets and matured for 2 months.&lt;br /&gt;
