Caprino al lattice di fico is a [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] from Monte Paganuccio in the &amp;#039;comune&amp;#039; of Cagli in [[Italy]]&amp;#039;s Marche region.  it is unusual in that it is [[Curdled|curdled]] by means of stirring a branch of a [[Fig|fig]] tree into the [[Milk|milk]] until it curdles.  It is a simple procedure but requires great experience because if the branch remains immersed for a moment longer than necessary, the [[Cheese|cheese]] takes on a nasty, [[Bitter|bitter]] taste.  The cheese is matured for at least one month or can be left for up to a year and has a savoury, slightly spicy flavour.&lt;br /&gt;
