Caprino [[Pasta|pasta]] cruda resembles [[Pecorino]] but is an [[Unpasteurised|unpasteurised]] [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] from Sardinia.  It has an aromatic and spicy flavour which imediately reveals its strong personality.  It is Sardinia&amp;#039;s most traditional [[Goats&amp;#039; milk|goats&amp;#039; milk]] [[Cheese|cheese]] and is matured for 3-6 months.  Its shape height and diameter are variable, but it usually weighs between 1.5-3kg.  With a white interior, the rind can be yellow to dark [[Brown|brown]] depending on the maturation period.&lt;br /&gt;
