&lt;br /&gt;
Canestrato d&amp;#039;Aspromonte is produced with [[Ewes|ewes]]&amp;#039;, [[Goats|goats]]&amp;#039; or [[Cows&amp;#039; milk|cows&amp;#039; milk]], or a mixture. It has a cylindrical shape with a height of 7-8cm, a diameter of 17-20cm, and its weight varies between 1 and 2kg. The rind is firm and light [[Brown|brown]], with streaks produced by the reed baskets in which it is left to drain. The flavour is delicate and spicy.  It matures for 4 to 5 months and is made throughout the year in the mountains of Aspromonte in the [[Italian]] province of Reggio Calabra.&lt;br /&gt;
