Canestrato is a hard [[Cheese|cheese]] which is produced throughout Sicily.  It is made from [[Unpasteurised|unpasteurised]] [[Cows&amp;#039; milk|cows&amp;#039; milk]] mixed with [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] and / or [[Goats&amp;#039; milk|goats&amp;#039; milk]] and is still produced using traditional techniques with old [[Tools|tools]].  It can contain added [[Black pepper|black pepper]] or [[Chilli flakes|chilli flakes]].  &amp;#039;&amp;#039;Primosale&amp;#039;&amp;#039; indicates a fresh [[Cheese|cheese]] matured for 8 to 10 days or so which has been dry [[Salted|salted]].  &amp;#039;&amp;#039;Secondosale&amp;#039;&amp;#039; indicates a semi-aged cheese matured for 2 to 3 months or so, that has been dry salted.  &amp;#039;&amp;#039;Stagionato&amp;#039;&amp;#039; indicates a fully matured cheese, salted in the same way, matured for more than 3 to 4 months.  It is matured in natural caves and cellars.&lt;br /&gt;
