Campo de Montalbán is a semi-hard [[Cheese|cheese]] from La Mancha, made with a mixture of [[Cows|cows]]&amp;#039;, [[Goats|goats]]&amp;#039; and [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] and is quite similar to [[Manchego]].  The waxy rind has a zig-zag pattern of similar characteristics and originally was created by the use of moulds made from esparto grass. Nowadays, the moulds are plastic and the colour of the rind is moss green.&lt;br /&gt;
&lt;br /&gt;
The interior is not as white as [[Manchego]], being a straw yellow colour and the texture is more buttery.  It also has a more complex flavour, due to its being made with a mixture of three different milks.  Of medium strength, the [[Cheese|cheese]] is rich and with a nicely balanced flavour that is smooth and with nutty notes and a pleasing final acidity.&lt;br /&gt;
&lt;br /&gt;
It takes the form of wheels from 20 to 22 cm. diameter, 10 to 12 cm. tall and weighs approximately 2.7 kg.  It is matured for 90 days and has a [[Fat|fat]] in dry matter content of 45%.&lt;br /&gt;
