Callu de Crabettu is a hard, [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] from Sardinia which is produced in the primitive fashion of our ancestors, by  the shepherds of Nuoro.  Rindless, it is encased in the stomach of a baby [[Goat|goat]].  It is made from the last [[Milk|milk]] of a lactating goat and is [[Curdled|curdled]] by the acid from the stomach and one could say that this is the only case in which the milk is added to the [[Curd|curd]] and not vice versa.  The local custom is to eat it (including the stomach wall acting as a &amp;#039;rind&amp;#039;) with sliced [[Bread|bread]] , or sliced, [[Fried|fried]] in [[Lard|lard]].  It is produced in spring or summer when the kids are born.  The [[Cheese|cheese]], which is not [[Salted|salted]], matures for 2-3 months.   The flavour is intense, almost spicy and very tasty and is pale yellow, granular and compact.&lt;br /&gt;
