Calçots are a type of onion which are very popular in Cataluña and those produced in Valls have 'Indicación Geográfica Protegida' (IGP) status.. They are produced by firstly sowing the seeds and from about August every year they are successively dug up and replanted further under the ground. This results in the onions producing several shoots which eventually become the calçots.

They are eaten cooked, either roasted or barbecued and then dunked in a special sauce called [[Salvitxada|salvitxada]]. Every year there is a Fiesta de la Calçotada (Calçotada Party) in Valls which includes a calçots eating competition.
