Caciotta vaccina al caglio vegetale is a [[Cheese|cheese]] made from mixed breed [[Cows' milk|cows' milk]] and [[Rennet|rennet]] made from the flowers of [[Artichokes|artichokes]] and [[Cardoons|cardoons]]. It is produced in the province of Pesaro and Urbino, in particular in the territory of Montefeltro in the Marche region of [[Italy]].

Matured for 2 to 6 months, it is cylindrical, with a soft, straw-coloured rind. It has a compact texture with a few holes. It has a full, mellow flavour, with hints of [[Milk|milk]] enzymes.
