Caciotta dei monti della Laga is a soft table [[Cheese|cheese]] made &amp;amp;#8203;&amp;amp;#8203;from [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] in the province of Rieti in [[Italy]]&amp;#039;s Lazio region.  Sometimes up to 30% [[Goats&amp;#039; milk|goats&amp;#039; milk]] can be added to it.  It is available plain or with the addition of [[Black pepper|black pepper]] or [[Chilli|chilli]].  It weighs 500g-2kg, has a pale yellow interior and is matured for 20 to 30 days.  It can be sweet or slightly salty in taste and is produced from March to October.&lt;br /&gt;
