Cacioricotta di bufala is a [[Buffalo milk cheese|buffalo milk cheese]] from Amaseno in Frosinone in the [[Italian]] province of Lazio which is produced all year round.  It has a cylindrical shape and weighs from 100 to 300 g.  It is matured for at least 60 days but also up to 1 year to produce a [[Cheese|cheese]] suitable for [[Grating|grating]].  The flavour ranges from sweet when young to savoury when aged.&lt;br /&gt;
