Caciocavallo di Bufala is made from unpasteurised water buffalo [[milk]]. It is a traditional, stretched [[curd]] [[cheese]] formed into a gourd shape and tied at the end with a cord to hang from. &lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is matured for 3 months and typically weighs around 2 kg.  It is spun by hand with wooden ladles and salted in [[brine]].  It is full-flavoured, yet light and a smoked version (using wheat straw) is also available.&lt;br /&gt;
