Cacio a forma di limone is an [[Unpasteurised|unpasteurised]] [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] which is produced in the valley of Metauro in the Marche region of [[Italy]] from April to September.  It takes its name from the fact that it is moulded in [[Lemon|lemon]]-shaped terracotta moulds and that it is brushed with a mixture of [[Flour|flour]], water and [[Lemon peel|lemon peel]].  It is matured for 4-10 days and weighs 100-150g.  It is a fresh, [[White cheese|white cheese]] with a lemony flavour.&lt;br /&gt;
