Cabécou is a small round [[Cheese|cheese]] of the [[Rocamadour]] family. It is unpressed and is made with [[Unpasteurised|unpasteurised]] [[Milk|milk]].  It has a natural rind which is a uniform pale yellow colour. The homogeneous [[Cheese|cheese]] is tender and creamy and it tastes of [[Lactic acid|lactic acid]]. The maturation period is very brief because of its small size, and is usually around 10 days. In special cases it can last up to 4 weeks.  The dimensions are 4 to 5cm in diameter, 1.5cm in height. Its weight is 40 g.&lt;br /&gt;
