Busche is a [[cheese]] from the province of Belluno and is made with the unpasteurised [[milk]] of the Bruno and Bruno Alpina breed of cow.  It takes its name from the town in which it is produced.  However, when it was first made in the 1970s, it was called Mastella, but received its current name in the 1980s to reflect its geographic origin.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]], which is excellent for melting, has a delicate and pleasant flavour.  Both the rind and the interior are white, with a soft, creamy texture.  It is salted in [[brine]].&lt;br /&gt;
&lt;br /&gt;
Busche is produced in cylinders of approximately 6 kg in weight, and has a diameter of 32 cm and height of 8 cm.  It takes about a month to mature.&lt;br /&gt;
