Buelles (also known as &amp;#039;&amp;#039;&amp;#039;Queso de La Chivita&amp;#039;&amp;#039;&amp;#039;) is made from goats’ [[milk]] or a mixture of cows’ and goats’ [[milk]] and is from Buelles in the Peñamellera Baja.&lt;br /&gt;
&lt;br /&gt;
To make the [[cheese]], [[rennet]] to the [[milk]] and heated up to 30 º for half an hour. The [[curd]] is cut into small pieces, and brought back to a higher temperature than previously.  It is left to drain and put into moulds, then pressed to complete the draining process.  The exterior is salted and left to mature for two months, whilst periodically being turned.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is cylindrical in shape with a soft, white interior, which will be more yellow if cows’ [[milk]] is added, and can have a mouldy rind.  It has a mild aroma and a well- balanced flavour of acidity and slight spiciness.&lt;br /&gt;

The [[cheese]] is available in various sizes.&lt;br /&gt;
