Bruzzu is a Ligurian [[Cheese|cheese]] produced from the [[Whey|whey]] of [[Ewes&amp;#039; milk|ewes&amp;#039; milk]].  It is also called [[Ricotta]] di Pecora.  It has a creamy white colour, and the flavour is more or less spicy depending on its age. It matures in about a week in cellars and the [[Cheeses|cheeses]] are turned every day. It is made in the area of Cosio Arroscia in the province of Imperia.&lt;br /&gt;
