Brique Chèvre is a [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] produced in Le-Puy-en-Velay in the Haute-Loire département of the Auvergne. Weighing just 200g the [[Cheese|cheese]] is best consumed between May and September, although it is still good during the rest of the year.  It is matured for 20 days.  When young, it has a sweet goaty taste, which becomes more acidic as it ages.&lt;br /&gt;
