Origin
Brebis de Haute-Provence is a soft ewes' milk cheese from Provence-Alpes-Côte d'Azur. Like its variant Brebis du Luberon, this traditional cheese is decorated with herbs such as savory.

It is matured for one month with its mild flavour becoming more complex over time. It is consumed during the winter and spring.

Circular in shape, it has a diameter of 6.5 to 7 cm, is 3 cm high and weighs 120g.
