Bray Picard is a &amp;#039;&amp;#039;fermier&amp;#039;&amp;#039; [[Cheese|cheese]] which uses the technology of enriched, [[Unpasteurised|unpasteurised]] [[Cows|cows]]&amp;#039;  [[Milk|milk]].  This creamy cheese, with 50% [[Fat|fat]] to dry matter, is native to Bray, specifically Gournay en Bray in Picardie.  It is consumed young and is sweet with an aroma smell of straw and [[Butter|butter]]. It gains in strength and smoothness over time and won a Bronze medal in the Concours de la Capelle in 1994.&lt;br /&gt;
