Boschetto al Tartufo is a semi-soft [[Cheese|cheese]] made with a mixture of [[Pasteurised|pasteurised]] [[Cows|cows]]&amp;#039; and [[Ewes&amp;#039; milk|ewes&amp;#039; milk]].  It is produced by the Il Forteto Cooperative in Mugello in Tuscany.&lt;br /&gt;
&lt;br /&gt;
The [[Cheese|cheese]] has a sweet and mild flavour, a mild aroma and a creamy texture.  It contains [[White truffles|white truffles]] which adds a mushroomy taste to the cheese.  It is matured for less than 2 months.&lt;br /&gt;
