Bleu de chèvre de Haute Provence is an goats' milk cheese from Provence-Alpes-Côte d'Azur. It is an original cheese which blends the technology of blue veined cheese, combined with unpasteurised goats' milk for a superior taste.

It has a characteristic, pronounced goaty flavour with aromas of blue. While persisting in the mouth, its taste is softened due to its melting texture which is buttery in the mouth.

It has a natural, fluffy, irregular, mottled blue-grey rind. The paste is white and blue-veined in the cavities. Each cheese is about 7cm in diameter and 5cm tall.
