Birdoswald is an organic, farmhouse [[cheese]] produced from the unpasteurised [[milk]] of Ayrshire cows by Eric and Dianne Horn at [http://www.slackhousefarm.co.uk/ Slack House Farm], near Hadrian’s Wall.  It is made to an old recipe which originated in Ireland, but which was taken to Ayrshire back in 1688.&lt;br /&gt;
&lt;br /&gt;
The [[Cheddar]]-type [[cheese]] is made by taking the warm [[milk]], straight from the cow, and hand-worked for up to 5 hours to produce a 20 lb cloth-bound, mould ripened [[cheese]] that is matured for up to 6 months.&lt;br /&gt;
&lt;br /&gt;
Unavailable outside the area, you can buy the [[cheese]] at farmer’s markets, Westmorland Farm Shop (on the M6 at Tebay Services) and some farm shops in north Cumbria.&lt;br /&gt;
