&lt;br /&gt;
Armallan is a strong, semi-hard, [[unpasteurised]] [[goats&amp;#039; milk]] [[cheese]] produced by Jesús Calzón García at his artisan dairy Valle del Narcea in Tineo, Asturias.  It is matured for just 10 days.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a firm interior which is whitish yellow in colour and has sporadic, irregular holes and cracks. The rind, which is treated with beeswax is a very intense ivory, with light shades of brown in places.  It has an intense aroma of goat, with a hint of [[hazelnuts]] and the outer part is steely and moist.  On the palate, the texture is more melting than expected and the [[cheese]] has an intense aftertaste with slight hints of [[honey]] and [[hazelnuts]].&lt;br /&gt;
