[[Ardsallagh]] hard [[Goats cheese|goats cheese]] is a semi hard, mild [[Cheese|cheese]]. It develops its famous taste as it matures, from an extremely mild cheese when young, to a distinctive flavour as it ages. The most mature Ardsallagh hard cheese can even be [[Grated|grated]] for a [[Parmesan]]-like taste. It is available in a range of different sizes.  They also create a [[Smoked|smoked]] hard cheese which is gently smoked over beechwood for a complex smoky flavour.&lt;br /&gt;

[[Ardsallagh]] soft [[Goats|goats]]’ [[Cheese|cheese]] is a [[White cheese|white cheese]] with a creamy texture. This cheese has a gentle flavour as it is made daily from their own fresh goats [[Milk|milk]].&lt;br /&gt;
