Aracena is a hard, washed-rind, unpasteurised, goats’ [[milk]] cheese from the province of Huelva. It is one of a few goats’ [[milk]] [[cheeses]] produced in Spain&amp;#039;s southwest, where ewes’ [[milk]] [[cheeses]] are much more prevalent. &lt;br /&gt;
&lt;br /&gt;
The white [[cheese]] has a moist texture, a strong earthy taste and is matured for 70 days.  It is available ‘natural’, and flavoured with ‘[[fines herbes]]’, [[rosemary]] or [[paprika]].  &lt;br /&gt;
&lt;br /&gt;
This [[cheese]] which recently won first prize in an Andalúz food competition, is ideal to eat alone or with [[honey]] or [[marmalade]].  Aracena is also known as ‘Queso de la Sierra de Huelva’, ‘Queso de Andévalo’ and ‘Queso Añejo de Cabra’.&lt;br /&gt;
