Animaletti di Provola is a mixed-breed cows’[[milk]] [[cheese]] produced in Marcellinara (Catanzaro).&lt;br /&gt;
&lt;br /&gt;
The yellow, un-salted [[cheese]] is rather a novelty and is made to order for special occasions or to be sent abroad or within Italy for promotional purposes.  It is shaped by hand into a small horse, weighing about 35 g or a larger horse, complete with knight and armour weighing 200-300 g.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is cooled in cold water, soaked in [[brine]] for a few hours, then allowed to dry.  It is matured for 4-5 days, in a cool, ventilated area.&lt;br /&gt;
